Pineapple Salsa is the perfect summer topping, side dish, or snack. Fresh pineapple, spicy jalapenos, and cilantro are the key components to balance out this delicious alternative to tomato salsa.
It has been over 100 degrees the past week here in the N.C., which means I’ve been craving refreshing summer dishes with all the super fresh produce around!
Pineapple Salsa is one of my favorite summer recipes; I loooove the sweet and spicy combination. And seriously – the freshness! I’m only a few sentences in for this post, and I have mentioned freshness how many times? I can’t get enough of it.
I have to be honest with you though, I forgot one of the ingredients I like to have in my pineapple salsa when I photographed it for you. As I’ve mentioned before, I live in the middle of no where, and taking a hike all the way back to the store wasn’t really in the cards for me.
What’s that mean for you? It means you have a real-life example that even if you add and subtract ingredients to fit your taste, this salsa is still going to be fresh, summery, and fabulous!
So what’s the missing ingredient? Red bell pepper. It adds a nice color pop and a little extra crunch to the salsa. The following recipe includes the red bell pepper; if you do exclude it, the salsa might seem a little onion and jalapeno heavy for some taste buds, so either reduce those amounts, add a different bell pepper, or keep as is. It will be delish regardless, I promise.

I made this pineapple salsa specifically for a summer recipe that I LOVE! This recipe has been my favorite for the past few years, and I can’t seem to get enough of it whenever possible –> Pineapple salsa with seafood – usually scallops or shrimp – with coconut rice (recipe coming soon!).
You could try pineapple salsa on top of some chicken, on a salad, or as a side, too. The possibilities are endless!
As you can see, get out some chips and start dipping away, because yes, you can eat this just as you would a tomato salsa! For a little extra sweetness try with some sugar and cinnamon pita chips. My sweet tooth is speaking up now!

- 1½ cups pineapple, diced
- ½ cup red bell pepper, diced (optional: not pictured in post)
- ¼ cup red onion, diced
- 2 Tablespoons jalapeno, seeded and finely chopped
- 1 garlic clove, minced
- ¼ cup cilantro, chopped
- 1 lime, juiced
- Salt to taste
- Combine diced pineapple, red bell pepper, red onion, jalapeno, garlic, and cilantro.
- Add lime juice and stir to combine.
- Salt to taste.
