Pesto Tomato Burrata Spread

If you need a delicious, easy (…ish, see more below!), guest-friendly appetizer, this is IT!

I’ll be honest: I wavered about sharing this. I mean, it IS delicious. Who can argue with pesto, roasted tomato jam, and BURRATA? I mean, we are all on this burrata train, going full speed ahead, right?

But I thought maybe it looked weird? And looks are so important on a food blog, aren’t they? Does it look weird? I don’t know, but what I did know is that you NEED this recipe in your life.

Hello, creamy Burrata, warm, soulful tomato jam, and bright, garlic-y pesto. And spread on a piece of toasted GARLIC baguette (a.k.a. crostini). SOLD. 100% sign me up for life because this is where I want to be. 

Real quick: grilled garlic baguette slices is where everyone should want to be. Holy life. 

I’m always trying to use up leftover ingredients (or meals) in a unique way. I’m so not about the leftover life. So after a summer of lush basil plants and roasted tomato jam, and of course the never-ending supply of burrata I’ve got going on: Pesto Tomato Burrata Spread was born.

It became dinner so many nights this summer… no shame in my game here!

It’s a mix between can be SO INCREDIBLY EASY and “takes a little bit of time” recipe. How? Well, if you already have pesto and simple roasted tomato jam in your fridge, all you have to do is layer it up. 

However, if you don’t have those key pieces pre-made, then the roasted tomato jam does take some time to come together – although it’s mostly effortless and absolutely worth it. 

You could buy some tomato jam and pesto – but naturally I prefer homemade

Moral of the story? Always have pesto and tomato jam in your fridge. Problem. Solved. 

There’s still time to make gigantic batches of both with all of our end-of-summer produce and voila! You can have Pesto Tomato Burrata Spread all winter long.

Which also means that those last minute get-togethers because your girlfriends just have to chat – over wine – won’t be left without a delicious, easy appetizer. As we know, nothing goes better with burrata than wine and friendship. Well, besides pesto and tomato, but we’ve got that covered.

Pesto Tomato Burrata Spread

Description

A delicious appetizer that’s easy to throw together with pesto and tomato jam on hand!

Instructions

  1. Heat grill, grill pan, or oven to 375°F. Brush baguette slices lightly with olive oil. Grill for 2-3 minutes on each side, until marks appear or toasted. Remove and rub with garlic cloves.
  2. On a serving plate, layer tomato jam, pesto, and burrata. Sprinkle with a dash of salt and freshly ground black pepper.
  3. To serve: spread a layer of the tomato jam, pesto, and burrata on each crostini slice (I have guests serve these up themselves).

Notes

Use store-bought pesto and tomato jam to make this super quick and easy!
